Caramel Apples

So you may have noticed a trend in my habits, specifically that around this time of year I just start eating myself silly. The kitchen is taken by storm, all day long.
Tonight, caramel apples.
I may or may not have been waiting all year for October, just for these.
(This year's varieties: Chopped pecans, salted caramel, and M&M)

Something about Fall triggers the gene in my Northern-European DNA that causes me to want to eat as much as possible so I can pack on the pounds and insulate for winter hibernation.
(At least that is my theory.)
The neural pathway is set off as soon as I see trees that look like this:
This is our Fall Tree.
(Singular.)
(Okay fine, he has a little buddy there in the background.)
This is the time of year I really start to miss Maryland, where the WHOLE WORLD looks like this tree, all season long! Once I almost got in a car accident as I drove past a long winding lane lined with bright red maples. It was definitely show-stopping.

But anyway. Back to the apples.
I guess there's really nothing to say about them, except that they were delicious and I ate way too much for my own good.
I have no self-control.

Oh, I never thought I'd say this, but I DO miss Maryland!! I miss that I can drive for 10 mins in any direction to find a hiking trail, I miss the autumn color there!

I've always wanted to make caramel apples, that will make me a hero in my kids eyes.
How do you make salted caramel? Can you email me the recipe?
